    I thought that since a lot of people seemed interested in some of my recipe ideas that I would start a thread where people can post some recipes they liked.

    Thai Style Cous Cous
    1 Can Coconut Milk
    1 bunch of cilantro, chop the leaves and save the
    stems
    1 Stalk of lemon grass, cut into chunks
    1 Lime zested and cut in half
    1 Lemon zested and cut in half
    1 Cup Instant Cous Cous
    1 Bag Dried cherries

    Pour coconut milk in a small pot over medium heat

    Add lemon grass, cilantro stems, zest and juice of the lime and lemon.

    Let the milk mixture simmer for about 15 minutes.

    Strain the mix into a measuring cup.

    Place cous cous in a bowl and pour 1 cup of the strained milk over it. Cover bowl with plastic and set in a warm place. Let sit for 10 minutes.

    Remove plastic and fluff with a fork, mix in some dried cherries and chopped cilantro. Taste cous cous and adjust seasoning with salt and pepper.

    If you have any left over coconut milk mix you can use that as a marinade for fish or chicken.

    This dish would be good with some steamed halibut and bok choy and a nice Gewurztraminer goes really nicely with this.

    One of my favorite recipes of all time (not for the diet-conscious, however)

    Spicy Barbecue Shrimp

    Shrimp
    2 tablespoons olive oil
    3 garlic cloves, minced
    30 uncooked large shrimp, peeled, deveined
    Sauce
    2 tablespoons (1/4 stick) butter, room temperature
    2 tablespoons all purpose flour
    1 8-ounce bottle clam juice
    1/4 cup Worcestershire sauce
    2 tablespoons fresh lemon juice
    1 tablespoon tomato paste
    4 garlic cloves, minced
    3/4 teaspoon hot pepper sauce
    1/2 teaspoon cayenne pepper
    1/2 teaspoon sugar
    1/4 teaspoon paprika
    2 tablespoons (about) water

    For shrimp:
    Heat oil in large skillet over medium-high heat. Add garlic and stir 30 seconds. Sprinkle shrimp with salt and pepper. Add shrimp to skillet; sauté just until opaque in center, about 3 minutes. Remove skillet from heat.
    For sauce:
    Mix butter and flour in small bowl to blend. Combine clam juice and all remaining ingredients except water in medium saucepan. Simmer 5 minutes to blend flavors. Add butter-flour mixture and whisk until sauce thickens and is smooth, thinning with water by tablespoonfuls if desired, about 2 minutes. Season with salt and pepper. Add sauce to shrimp in skillet; simmer until heated through, about 2 minutes.

    Serve with crusty French bread, cuz you're gonna want to soak up EVERY LAST DROP of the sauce. :beer:

    Can you imagine the amount of alcohol needed for something like that, it's staggering.:drunk::drunk:

    Christmas Whiskey Cake

    1 cup butter
    2 cups sugar
    6 large eggs
    2 teaspoons baking powder
    3 cups flour, sifted
    1/2 t. salt
    1 cup bourbon
    1 pound pecans, chopped
    3 cups white raisins (or use candied fruit)
    1 t. nutmeg
    AND
    ~ a very large bottle of bourbon whiskey ~



    First, sample the whiskey to check for quality.
    Assemble all of the ingredients. Check the whiskey again.
    To be sure it is of the highest quality, pour one level cup and drink.
    Repeat this step.
    Turn on the electric mixer and beat one cup of butter in a large
    fluffy bowl. Add one teaspoon of sugar and cream until beat.
    Make sure the whiskey is still okay... try another cup.
    Turn off the mixer. Beat six leggs and add to the bowl,
    then chunk in the cup of dried flut. Mix on the tuner.
    Throw in two quarts of flour. Gradually pour in the cow.
    Add 2 dried anything.
    If the fried druit gets struck in the beaters, pry it loose with
    a drewscriver. Sample the whiskey and check it again for tonsistency.
    Next, sift two cups of salt. Or something. Whateva???
    Check the whiskey again.
    Now sift the nutmeg and strain your nuts. Add one table.
    And the spoon. Of whiskee. Or something. Whatever you find left.
    Grease the oven.
    Turn the crake pan to 350 degrees. Don't forget to beat off the turner.
    Pour the oven into the batter. Throw the bowl out the window.
    Lick the batter off the floor.
    Bake 300 minutes at 50 degrees.
    Finish the blobble of whishy and flow to bed.

    That cous cous sounds REALLY good, but I suffer from "Ingredientitus". Any more than 3 ingredients and I get really flustered.

    You just need to be organized. If you notice the way I wrote the recipe everything is in the order that you use it so you can start organized. The other thing is that you just mix all the ingredients with the coconut milk and simmer them and that is pretty easy.

    OMG ODB. That sounds just like Killer Shrimp. (Few shops in North LA, Venice is the one I go to)

    Dare i say this, cuz I do LOVE Killer Shrimp and Jack Shrimp ... This recipe is even better. The sauce is like a rich spicy gravy, not the thin (though delicious) broth at Killer and Jack. It's unbelievably good, and simple.

    Curse this diet i'm on!! #-o

    Broccoli and Cheese Risotto

    1/4 Cup Extra Virgin Olive Oil
    1 Medium onion - Diced
    1 1/2 Cups Arborio Rice (Some brands are labeled as Risotto, those are fine)
    1/2 Cup Dry White Wine
    8 Cups Chicken Stock Heated till warm
    1 Cup Broccoli Florets, frozen
    1/2 Cup Cheddar Cheese, cut into small cubes or shredded
    4 Tablespoons Unsalted Butter
    Salt and Pepper

    In a pot heat the olive oil till almost smoking.
    Add the onions and saute till onion is soft and translucent but not brown, 8 - 10 minutes
    Add the rice and stir with a wooden spoon until opaque, 3 - 4 minutes
    Add the wine and allow to reduce by more than half
    Add the broccoli
    Begin adding the stock in small batches, stirring with your wooden spoon, until the liquid is absorbed then add more.
    Continue adding the stock until rice is cooked to your liking, traditionally this is about 18 minutes.
    Remove pan from heat, add the butter and cheddar and stir until mixed well.
    Taste the risotto and adjust seasoning with salt and pepper.

    Do not use a metal spoon in this, whenever you are cooking rice you should use a wooded or plastic spoon. Metal spoons will break the rice as well as a strong possibility that you will get a metallic taste in the dish.

    Mushroom Croustades

    1 short French bread ( about ten inches)
    2 teaspoons olive oil
    9 ounces portobello mushrooms,quartered
    2 teaspoons tomato ketchup
    2 teaspoons lemon juice
    2 tablespoons skim milk
    2 Tablespoons fresh chives, snipped, plus some for garnish
    salt and pepper to taste

    1. preheat oven too 400F. Cut the French bread in half lengthwise.Scoop at the middle of each half ( like a boat) but leave thick edges. Brush with olive oil and put it on a baking sheet.Bake 6-8 min.
    2. Place Mushrooms in a small suacepan with the tomato ketchup,lemon juice and milk.Simmer for about 5 min.Or until most of the liquid is evaporated.
    3.remove from heat, add chives and salt and pepper to taste.Spoon into the bread and enjoy.

    Jamaican Black Bean Pot

    1 1/4 cups dried black beans
    1 Bay Leaf
    2 tablespoons vegetable oil
    1 large onion chopped
    1 Garlic clove chopped
    1 teaspoon mustard powder
    1 tablespoon blackstrap molasses
    2 tablespoons brown sugar
    1 teaspoon dried thyme
    1/2 teaspoon dried chili flakes
    1 teaspoon vegetable broth powder
    1 red bell pepper seeded and diced
    1 yellow bell pepper seeded and diced
    5 1/4 cups butternut squash or pumpkin seeded and diced 1/2 dice
    salt and pepper to taste

    1. soak beans over night, drain and rinse.
    Place into a large saucepan and cover with fresh water and bay leaf,boil rapidly for ten minutes.Reduce heat and simmer for 30 min.Drain and keep cooking water.Preheat oven to 350F
    2 Heat the oil in a saucepan and suate the onion and garlic for about 5min stir occasionally.Add mustard powder,molasses,sugar,thyme,chili and cook 1 more minute.stir in black beans.
    3. Transfer to casserole dish
    4.Add enough water to the saved cooking liquid to make 1 2/3 cups.Mix with vegetable broth powder and pour on to beans. Bake 25 min.
    5. add bell peppers and squash,cover and bake 45 more minutes.

    Trust me this is not as hard as it may seem and well worth it.I serve it on rice or couscous.

    :-k I'm not sure that I believe Pugz and these recipes....Pugz, if you will kindly post your address, I'll be by around 7pm to taste them, THEN maybe I'll try cooking ;)

    Can we get some after ride recipes. None of that power stuff you mix with water. I mean real food (not beer) that will rebuild, taste good, and not put back all the calories I just burned.

    Don't get me wrong I loved the ortega burger and curly fries after my ride yesterday...oh and the 3 pieces of pizza and porter I eat 2 hours later, but something more healthy for the mid-week training rides would be nice as well.

    If I am gonna do a long ride, I throw something in a Crockpot on low. When I get home its done.I will look through some of my own recipes and post them later.
