I would think it will not open till Tuesday, bearing any rain.

So I am new to Mtn biking and this is the first rain that I have been through so my questions is what is the average time that it takes for most areas to open?.

Do you think that with there being no rain today for this morning that Aliso will be open tomorrow (Sunday).

Check the website and call in the morning. It's usually a 2-3 day closure, more in some parks (El Moro being one).

You can always ride Santiago Truck Trail. It doesn't close when it rains

My friends rode STT yesterday and said that it was extremely muddy. There was so much mud that they had to walk a majority of the downhill.
