I'm looking to swap out the stock stem on my bike and would like to know if the single degree increase would noticeably affect the performance of my steering or my stance on the bike.

Why do you want to change the stem? To improve climbing? Shoulders get tired? Too cramped? Feel too stretched out?
A riser bar may be a good place to start. I may have one for you! One degree difference (i.e. stem) won't make much of a difference!
