Is there any rule of thumb for the hight of your handle bars for mountain bikes??? I mainly ride XC, single track, some hills, etc type stuff...

The handlebars should, I think, be about the same height as your saddle.
Most mt bikes come with a slight rise on the neck. I flipped my upside down and it helped get more leverage over the front tire when climbing steep pitches. You might try that, too. Riser bars are nice. I like bar ends, too. But, be warned, people make fun of you for having bar ends because they know it makes you hardcore. Jealous bitches.
