My all time favorite would have to be in Santa Barbara. Tunnel Trail. Really tech stuff on a 80mm travel fork. It's definately an eyefull.
Locally, I would have to say the San Juan/Chiquita loop and back. Long day in the saddle, great food at the candy store and plenty of tech riding too boot!

Chiquita for the fun technical decent
Hurkey Creek or Big Laguna for scenery
Santiago Oaks and Turnbull for a quick, fun ride locally.

Sedona for the best ride, locally though I'd have to say Mt Wilson Trail

I tried it once on a 5 inch travel bike, I had a blast, but it wasn't all that techy any more. You know?!

3 places come to mind:

Turnbull Canyon, nice mix of everything plus it's very local. roller coaster style riding (lots of climbing & descending) great place to combine trails to make rides up to 24 miles

Santa Monica Mountain loop: Sullivan Ridge climb, Farmer's S/T, Hectic S/T, Caballero Canyon to Hub then Eagle Rock loop, descend Will Rogers Backbone, down J-Drop, return to Amalfi/Capri. loads of fun.

San Gabriels loop: from JPL, climb Lower Sam Merrill, descend Sunset Ridge & El Prieto return to JPL. i've been riding this lately.

My favorite ride right now is the Zion/Winter Creek/Chantry ride. Lots of fun! I also enjoyed SART and Strawberry Peak.

I agree with the Fully Loop.
Not challenging enough for you? Take away suspension and gears, and the trail becomes a lot more fun.

And if you want some drops, there are some sick drops that I can see people have actually done (I'm sure they weren't on rigids, though).
