Default 3 weeks to ride straight

so my job is up on may 30th. one of the things i want to do, is hit all the greatest mtb trails from centralcal to socal in just a few weeks.

multi day trips are cool too. for the month of june, what rides are known as the best and coolest rides as far as scenery goes.

me and my girl are intermediate on skill level and in good shape.

if you had one shot to do these trails and not come back to CA, what are must do trails?

any advice?
