Hmmm. Lets See
Marzocchi for Forks
Turner Frames, or a good Single Pivot like Santa Cruz or Foes. Kona and Rocky Mountain frames are durable too.
Chris King Hubs and Headsets
Mavic Rims
Thompson Seatposts/Stems
Easton Aluminium Handle Bars
Shimano XT Shifters/Drivetrain (I am currnetly using SRAM/Truvativ, good so far)
Avid Mech Disk Brakes

That seems pretty good so far.

Jeesh, which fork haven't I had?
I have used Z1 Freeride forks (a 99 and 2k4 model) both are excellent if not heavy forks. I have had a Psylo SL (nice but high maintance), and various old Judy's. I had a Marzocchi Z1 X-Fly air fork (durable, but a not very plush), A Fox Float RL (good and light). Manitou Black 80/100. (A good for the price) A Manitou Minute 3 120MM (really bad fork). I have a white bros Dirt Jumping fork. I am currently riding a Pike Team on my 5 spot. I love this fork. So far no reliabilty issues, and it is very tunable. Maybe a little heavy for a ride like you are looking at.
As for the wheels, I have used various mavic rims depending on the bike. I currently have a Chris King/Mavic 317 rear wheel and a Hope 20mm thru axle hub mated to a mavic 819 rim for the front. I have a set of 521 mavics/Hadleys' on my downhill bike. I still have a set of 321 Mavics on some WTB hubs that has been really good too. I had good luck with the Hope hubs on my old Bullit that I rode for 3 years. Hope this helps you.

No race for me . Just 3 to 5 months of riding. Plan on carrying all my gear, and resuplying in towns.

doing it on an FS or a HT?

I'd imagine FS would keep you going longer.

To answer your first question, I find the Fox Float R Ava is one of the best components I've ever used. Especially since I use it for bigger stuff than what its meant for.
